Food and beverage stands separate contractors on different questions to an industrial or energy stand. Cold chain and refrigeration, live cooking and tasting counters, halal and food-handling signage, and sampling logistics all have to be designed in from the brief, not retrofitted once the layout is fixed. The part that separates contractors

What a Gulfood stand actually needs to get approved

Food and beverage stands live or die on utilities, hygiene and hospitality, not on joinery. Cold chain, live cooking and sampling are where an inexperienced contractor discovers the requirements too late. These are the six things that decide whether yours gets built and approved without a last-minute redesign.

Live cooking and open flame need their own sign-off

A chef's demo counter, a live cooking station or any open-flame or gas-fired equipment on a stand is a fire-safety and venue-approval item, not a furniture choice. Extraction, gas or electrical supply, and fire suppression provision all have to be declared and cleared with the venue ahead of build-up.

Contractors who quote you on the counter's finish are answering the wrong question. Ask instead what the venue's live-cooking and open-flame policy requires for this edition, and when that submission is due.

The test: can your contractor name the venue's live-cooking approval requirement today, without checking?

Refrigeration load is declared, not assumed

Chillers, freezers and cold display units draw significant power and need a declared electrical load, drainage provision and a structural floor position, especially where the unit is heavy or sits on an upper level. Treating refrigeration as a plug-in afterthought is the single most common reason a food stand's electrical plan gets rejected at submission.

Get your product and equipment schedule, including every chiller, freezer and cold counter, to the contractor early. If it arrives after the electrical layout is drawn, something gets moved or downsized.

The test: has anyone asked you for the power draw of every chilled unit on your stand? If not, the electrical plan has not started.

Sampling, tasting and hygiene are regulated, not decorative

A tasting counter or sampling bar has hygiene, waste-disposal and food-handler requirements attached to it, alongside crowd-flow around the counter itself. Halal status and allergen information need to be visible on the stand, not just in a brochure.

These are not stylistic choices. A tasting counter that looks elegant in a render but has nowhere for hand hygiene or waste bins will be flagged at inspection, and fixing it after build-up costs a redesign under time pressure.

The test: where does your used tasting cup or plate go? If the answer is vague, the layout is not finished.

Dual-venue logistics change the build-up window

Gulfood 2027 is the first edition to span both Dubai World Trade Centre and Dubai Exhibition Centre at Expo City Dubai. Access, loading bay allocation and build-up windows differ between the two venues, and confirming which hall you are in changes the delivery plan.

The practical consequence is that a stand builder working across both venues needs a crew and transport plan sized for whichever site you land in, confirmed as early as possible rather than assumed.

The test: ask which venue your hall sits in, and whether that changes your build-up day. A credible contractor already knows the difference.

Machinery demos at Gulfood Manufacturing carry their own load and power needs

Gulfood Manufacturing exhibitors showing processing or packaging equipment face the same floor-loading and power-declaration logic as a heavy industrial stand: point loads under machinery, power draw for live demonstrations, and noise or safety clearance around moving parts.

A stand built for a static product display does not automatically support a running production line demo. That has to be designed in from the brief.

The test: if your machine will run live on the stand, has anyone confirmed the floor loading and power supply for it specifically?

The structure is the most reusable asset you will own

A well-built stand frame, counters, chilled units and graphics panels can be stored, refreshed and rebuilt across editions with new branding and layout, rather than fabricated from zero each year.

The test: is the quote a one-off cost, or the first year of a multi-edition asset? Ask for both figures.

Choosing your build type

Shell scheme, custom stand or demonstration and hospitality stand?

Gulfood and Gulfood Manufacturing exhibitors choose between three build types: a shell scheme, a custom stand, or a demonstration and hospitality stand.

A shell scheme is the organiser's standard package of walls, fascia and basic lighting. A custom stand is designed and engineered to your own footprint, typically on one level. A demonstration and hospitality stand adds live cooking, tasting or machinery-demo provision plus meeting or lounge space, and sometimes a second level for larger Power Brands exhibitors. Levo Exhibitions builds all three and will tell you honestly which one your footprint, timeline and utility requirement actually support.

The honest guidance. If you are inside six to eight weeks of your Gulfood or Gulfood Manufacturing edition and want live cooking, chilled units or machinery demonstrations, treat the utility and approval submission as the deadline that governs your timeline, not the fabrication schedule. The better move in that position is a strong custom stand with the sampling or demo element simplified this year, and a fuller demonstration build planned earlier for the next edition. Gulfood and Gulfood Manufacturing span the whole food and beverage value chain, from fresh produce to processing machinery, and the exhibitor types on that floor want completely different things from a stand. Your category should decide the layout long before anyone picks a finish.

Dairy, beverage and fats & oils producers

Product is tasted, not just displayed. Chilled cabinets, a sampling counter and clear allergen and halal signage do the selling. Refrigeration load and hygiene provision for the sampling counter drive the layout more than the finish does.

Meat, poultry and seafood exhibitors

Cold chain is non-negotiable and odour and hygiene control matter to buyers walking the aisle. Expect enclosed chilled storage, dedicated preparation space kept separate from the visitor-facing counter, and a clear waste-handling plan.

Gulfood Manufacturing exhibitors

Processing, packaging and automation equipment brings real machinery: point loads, power draw and, where a line runs live, noise and safety clearance around moving parts. The equipment schedule with weights and power needs must reach the contractor before the electrical plan is drawn.

World Food and country pavilions

Multiple exhibitors under one national identity, with government sign-off and protocol requirements. Shared meeting or tasting space, consistent identity across separate companies, and a reception that can receive a delegation without disrupting the exhibitors behind it.

Gulfood Startups and new-to-market brands

Newer, smaller F&B brands are often competing for attention against very large neighbours on a tight budget. Clarity and a strong tasting moment beat footprint: say what the product is in plain language, and put the sample in a buyer's hand fast.

Power Brands and large corporates

Established multinational F&B brands are hosting as much as selling: buyer meetings, press moments and a controlled hospitality experience. Expect lounge and meeting capacity, a larger footprint, and sometimes a second level, built around a published schedule of appointments.

How a Gulfood stand gets built, and when to start

Three to six months is right for a custom stand with cold chain, live cooking or machinery demo provision. A straightforward custom stand can move faster. Dubai is a road move for a Dubai-based contractor, so logistics are simple, but Gulfood 2027's dual-venue format means build-up windows and access are allocated per hall rather than open.

Brief, floor plan and utility schedule, three to six months out

We review your hall allocation, venue, stand size, open sides, and any refrigeration, live cooking or machinery-demo requirement. That utility schedule drives the electrical and food-safety design, so it is requested first rather than last.

3D booth design, one to two weeks

Our in-house designers produce a 3D design and walk-through, resolving the tasting counter, chilled unit positions and meeting or hospitality capacity before anything is engineered. Most clients take two rounds of revisions.

Utility, food-safety and structural sign-off, three to five weeks

Electrical layouts for refrigeration and cooking equipment, food-handling and hygiene provision for sampling counters, and, for any second level or heavy machinery, structural drawings and sign-off. This stage is the longest and the least compressible part of the project.

Organiser submission and approval

The full package goes to DWTC against a published cut-off. Revisions at this stage are normal and are budgeted for in the programme rather than treated as a surprise.

Fabrication and graphics, four to six weeks

Steel, carpentry, joinery, chilled counters, lighting and print produced at our Dubai Investment Park workshop. This is a turnkey booth build: Levo owns design, engineering, fabrication, logistics and installation, so there is no second contractor to coordinate.

Install at DWTC or Dubai Exhibition Centre, show support, dismantle

Planning for Gulfood Manufacturing 2026 and reading this in August?

With roughly eleven weeks to doors opening on 3 November 2026, a custom stand is achievable if the brief lands now, and a straightforward stand with light sampling provision is comfortably realistic. A full live-cooking or heavy machinery demo stand is tighter, because the utility and food-safety submission alone can consume much of that window.
